What I like to do for a healthy and economical lunch is make rice and beans in mass quantities. I buy a bag of brown rice ($2-3), a couple of cans of black beans ($3), and a small can of corn (50 Cent). I cook the rice, mix the beans and corn in, then spice it up with some salt, chili spices, and a dash of paprika. This makes a lot, which feeds me for lunch for about 3 or 4 days. Sometimes I make some chicken and mix it in for a meal or two.
It's quite economical and easy to heat up in the microwave at work. Not to mention it's healthy and of course, everyone loves beans beans the musical fruit.
